Saying that the recipe is simple is making fun: the names of the ingredients are simple, but the intellectual "potion" of conceiving wine, alcohol and naturalness in herbs and spices is absolutely complex.


Vermouth del Professore BiancoThe wine is a white muscat, from Langhe region, to which was added pure alcohol, obtained from a refined distillation (it will reach 18 °); then, we add more than fifteen aromatic and medicinal herbs, collected on the mountain slopes that surround Torino, and spices. Vermouth del Professore is a product really far from the stereotypes of flavored wines, always called Vermouth, who create sublime cocktails like the Negroni and the Americano. It has been created with a definite purpose, to reclaim the role it has always had: to be an aperitive
The eye is fascinated by the amber color, while the smell floats on scents of wood, absinthe, bitter and dry straw; it is an atavistic memory, of mahogany shelves of pharmaceutical mixtures, based on the fruits of nature, herbal teas, ointments and aerosols. The subtle tactile sensation given by the ethyl alcohol, manages to remain in equilibrium with its heat (to be mitigated with proper serving temperature) and with hints of flavor produced by the infusion of herbs and spices. The harmonious thread of bitter taste closes with bowed tones and ginger notes, which absorb sugar without killing its presence to create a twin effect: sweet and bitter. We regard ourselves a wonderful aperitif, a tradition to brush up fully and with shared purposes, because a Vermouth like this has an unlimited class.

Vermouth del Professore RossoIt is the only vermouth in the world that is created from both red and white wines, 100% Italian and whose flavor is given by 100% natural flavorings, produced in-house. Vermouth De Professore is a handmade product, an excellence that mature for six months in small oak barrels and then delights with its unique aroma. The warm and enveloping scent of woods, balsamic and minty, reminds pharmaceutical mixtures of the past, balanced by absinth, by orange bitter and vanilla. The full and smooth taste, is gradually dominated by balsamic and menthol notes, that flow into the bitter, but at the same time soft, aftertaste of rhubarb and gentian, supported by our muscovado sugar and a light tannin acquired in months of aging.

Gin del Professore MonsieurDel Professore Monsieur is a unique gin for which only the Jerry Thomas Project has the secret recipe. It is composed entirely of berries picked in Italy. The 16 botanicals used are cold-infused in a juniper distillate with herbs and spices. It undergoes a final filtration that is gentle so as to maintain the maximum aromas. In order to create a unique product, the recipe is changed slightly for every new batch.

Gin del Professore MadameThe Gin a la Madame really is a unique gin, displaying aromas from a carefully-calculated blend that speaks primarily of juniper, lemon, orange, tansy, turmeric, cinnamon and cassia bark, and particularly memorable for its freshness and intensity of the spices. On the palate, the Madame is beautifully warming, with a savoury, balsamic structure beneath the various herbs and spices. Although each ingredient, from juniper to cinnamon, is decipherable, they are all spun into a gorgeous overall flavour of juniper rich with floral and comforting medicinal notes. This core flavour is drawn out on the finish and yet continues to hold the characteristics of each layer.
