At Ca’ del Bosco, tradition pays tribute to past generations, as our Cuvée Annamaria Clementi dedicated to Maurizio’s mother shows, but it is never an end in itself. Respect for the past with modern improvements.
Wines of quality, natural wines. We take great interest in the discussion – the passion, the ferment – that surrounds what are known as “natural wines”. This is reflected for Ca del Bosco in safeguarding the wine potential of its land and the sustainability of its territory. Every year at Ca’ del Bosco, we trial new solutions to improve our wines behind conventional wisdom. This led for example to the use of cultured yeasts because they ensure a rapid start to fermentation and enable us to restrict the use of sulphites. The yeasts we seek are neutral, not generic or character-specific. We do not want to alter the grape’s specific profile. or the character of the vineyard.
Another legend regards the excessive influence of small oak casks. This can – and all too often does – happen when the wrong cask is used It’s important to use properly treated wood so that it adds only what is necessary. small oak is the ideal way to enhance the aromatic profiles of, and add depth flavour to, Ca’ del Bosco wines. Properly used, small casks are a wine’s high road to excellence.

Chardonnay 2011APTITUDE. Chardonnay, a french white grape, is the most famous of the international, a grape that succeeds in giving its best whatever the territory, retaining the characteristics making it recognizable. Since 1983, its first vintage, this Chardonnay has been expressing its class at the highest levels. Strict grape selection, fermentation in small oak barrels and lengthy refinement on yeasts enable the chardonnay to perform to perfection. Right from the earliest vintages this wine won acclaim from international critics who continue to consider it a reference among the finest italian wines. All stages of vinification of the base wines are carried out in small oak casks from selected wood seasoned for at least three years, stored in deep cellars. A jewel created in 2007 from thirty year's experience. Only the finest Chardonnay (75%), Pinot Nero (15%) and Pinot Bianco (10%) grapes from 134 vineyards, vinified separately and skillfully blended with reserves of the finest vintages (at least 20%) go into the magical rite of Cuvée creation. It will take 28 months of refinement on yeasts before this wine is ready to express all its richness and identity. A classic, well-balanced Franciacorta, pleasantly fresh and crisp. Curtefranca Rosso 2011History. This is Franciacorta's red par excellence and a Ca' del Bosco classic. Made for the first time with the 1975 vintage, it's in the gene pool of traditional grape-growing in the zone, where it's always been made and known as Burdonsi Magher. The red conceived in Franciacorta is a wine with specific features: a blend of Cabernet, Carmènere, Merlot, Barbera and Nebbiolo, a variegated ensemble well suited to this climate and then matured in wood and steel for about two years. An intense but not too meaty wine, supple, mellow and enjoyable. An excellent companion for traditional fare, it retains its typical fragrance for many years.
